The Apricot, Cranberry and Walnut Cake is a delicious alternative to a traditional rich fruit cake. Juicy cranberries, plump apricots and vine fruits are soaked in sherry before adding crunchy chunks of walnut.
The fruitiness of the cake is then enhanced even more with a liberal measure of apricot liqueur.
